Salmon burgers with homemade tartar sauce
Yields 4
Ingredients:
For the tartar sauce
- 1 cup mayonnaise
- 1 teaspoon yellow mustard
- 2 teaspoons dill pickle, minced
- 1 teaspoon lemon juice
- Few drops of hot sauce (optional)
For the burgers
- 1 pound skinless salmon fillet, bones removed, finely diced
- 1 egg, beaten
- 1-2 green onions, finely diced
- 1 tablespoon fresh parsley, chopped
- 3-4 tablespoons panko breadcrumbs
- 1 tablespoon chopped pecan pieces (you can substitute walnuts)
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
Directions:
For the tartar sauce
- In a small bowl, mix together all the ingredients and refrigerate until ready to use.
For the burgers
- Dice the salmon into pieces that are about one-quarter-inch in size, add to a medium-sized bowl.
- In a small bowl, add the egg and beat it.
- To the salmon, carefully add the panko breadcrumbs, onion, parsley, pecans, salt and pepper, and the egg.
- Mix together well, but do not overmix the ingredients.
- Have a baking pan ready. Form the salmon mixture into patties that are about one-inch thick. Place them on the baking sheet and refrigerate for about 30 minutes.
- Heat the oil in a large skillet over medium heat. Carefully add the patties and cook them for about three minutes on each side, or until they are cooked through.
- Serve on burger buns with the tartar sauce and veggie toppings of choice.
