Sometimes there’s nothing better than a grilled cheese sandwich. But instead of the same old American cheese on white bread, why not try fruit with your cheese instead?
Figs are in season. And while figs may conjure up visions of little cookies, they are quite delicious on their own or grilled and served with cheese for an appetizer. Recently a friend of mine mentioned she’d made herself a grilled cheese sandwich using fresh figs, and the idea sounded absolutely scrumptious. Since I’d just bought a basket of the delectable purple fruit, I now had the perfect way to use them. The best part about this awesome sandwich is just how easy it is to make.

- 1 tablespoon butter
Directions:
- Lay the sliced bread on a work surface. Cover two slices with the figs. Top with the Gouda slices and the other slice of bread.
- Heat the butter in a large skillet over medium-high heat. Place the sandwiches in the skillet and grill until the cheese melts, about two minutes per side. Serve immediately.
