If your family is a football family, then there’s no doubt you’re all gathered around the TV watching your favorite team play on a Sunday. Don’t make a habit of eating dinner in front of the TV, but on a game day, this recipe for chicken chili nachos is the perfect meal that will allow everyone to keep watching the action and enjoying each other’s company, while still getting filled up with a tasty dinner.
This dish is really easy to get together, and only includes minimal time on the stovetop and in the oven. That makes it perfect for any busy night, and still lets you get a great family meal together. Serve this with a fresh green salad for a complete dinner.
Gather ‘round
The National Center on Addiction and Substance Abuse at Columbia University (CASA) recently reported on a national phone survey of 1,000 teens and 829 parents of teens that showed the advantages of eating dinners together as a family. Benefits include things like better grades, helping them avoid cigarettes, alcohol and marijuana, eating healthier and less stress at home. “One of the simplest and most effective ways for parents to be engaged in their teens’ lives is by having frequent family dinners,” says Joseph Califano Jr., chairman and president of CASA.

Chicken Chili Nachos
Serves 4–6
Ingredients:
- 1 bag of your favorite tortilla chips
- 1/2 pound pre-cooked chicken, cut into cubes
- 1 (15-ounce) can of black beans, drained and rinsed
- 1 (15-ounce) can of chili beans in spices (do not drain or rinse)
- 1/3 cup diced onion
- 4–6 ounces corn kernels (thawed if using frozen)
- 6 ounces of your favorite salsa
- 6 ounces shredded Mexican-blend cheese
- 1 tablespoon olive oil
- Optional garnishes: sour cream, chopped olives, chopped jalapenos, extra salsa
Directions:
- Preheat your oven to 350 degrees F.
- Add the olive oil to a large sauté pan over medium-high heat. When hot, add the onions and cook for about 2–3 minutes.
- Add both the black beans and chili beans, along with the chicken, corn and salsa. Mix together to warm through and coat everything. Remove from heat.
- Layer a handful of chips on the bottom of an oven-proof dish like a 10-inch pie plate.
- Spoon a layer of the bean and chicken mixture over the chips, then add a sprinkling of the cheese. Repeat until your baking dish is piled high, and sprinkle some cheese on the top.
- Bake in the oven for about 5 minutes, so everything is warm and the cheese melts.
