These crispy, crunchy potato leaves make the perfect companion to just about any meal, from your Thanksgiving turkey to a simple hot dog. Although you can bake these to make them healthier, you won’t get that crispy, golden brown color that makes them look even more like autumn leaves!
Festive potato leaves recipes
Yields about 8 leaves
Ingredients:
- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon Cajun seasoning
- 1 teaspoon chili powder
- Salt and pepper
- Leaf cookie cutter
Directions:
- Cut potatoes in half, vertically. Then carefully slice about 1/4 to 1/2-inch slabs until you have eight.
- Using your leaf cookie cutter, press down on the potato firmly. Then remove the leaf cutout, discarding the rest of the potato. Liberally rub half of the leaves with Cajun seasoning and the other half with chili powder. Sprinkle all with salt and pepper.
- Heat olive oil in a large pan over medium-high heat. Place potatoes into the hot oil. Cook until golden brown on both sides, about 8 to 10 minutes. Remove from heat and enjoy!
