Bacon & goat cheese baked apples

Move over mashed potatoes and green bean casserole, there’s a new side dish in town, and it’s here to stay. These savory and decadent goat cheese and bacon stuffed apples make the perfect single serving side dish for your sophisticated Thanksgiving table.

These apples are slow baked until they are so soft they practically melt in your mouth. In fact, these were so soft and so gooey, we ate them with a spoon! The best part about these irresistible apples (besides the taste) is this simple fact: Since you eat the apple, the only dish you need to clean is the spoon!

Bacon and goat cheese stuffed apples recipe

Serves 4

Ingredients: 

  • 4 apples, cored
  • 12 ounces soft goat cheese
  • 1 tablespoon light cream
  • 1 tablespoon butter
  • 1/4 cup chopped onions
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 4 pieces bacon, cooked and crumbled

Directions: 

  1. Preheat oven to 375 degrees F. Lightly grease a baking dish and place apples inside of it.
  2. Heat butter in a large skillet over medium high heat. Add onions and cook until just soft and fragrant, about two minutes. Add garlic and cook until soft, another two minutes. Add the cream and cook until liquid has mostly evaporated, about two minutes.
  3. Turn off heat and stir in goat cheese (cheese will melt fairly quickly). Scoop about one to two tablespoons of cheese mixture into each apple. Top each apple with one piece of crumbled bacon. Add some salt and pepper to taste.
  4. Bake apples for about 25 – 30 minutes, or until apples are soft and cheese is bubbly.
