Family dinner night: Baked potato bar

I just love potatoes. They’re so versatile with so many delicious ways to prepare them. One of my favorite ways to eat potatoes is baked.

So warm and delicious, baked potatoes are just begging to be loaded with lots of tasty toppings. Potatoes are actually nutritious, too, because they’re loaded with vitamins and minerals.

Most kids love potatoes, so a baked potato bar makes for a great family-friendly meal. It’s also the perfect meal for a party when you’re serving large crowds. They’re cheap, easy to make and fun to assemble. Here’s how to make a baked potato bar:

Prepare potatoes

Grab some large baking potatoes and give them a good scrub. Dry your potatoes and wrap them in tinfoil. Using a fork, poke some holes in the tinfoil so the steam can escape.

Bake potatoes

Bake your potatoes in the oven at 400 degrees F for about 50 to 60 minutes, or until the potatoes are nice and tender. Remove them from the oven, remove the foil and place the potatoes on a plate. Slice the potatoes both lengthwise and widthwise. This will give you some room for loading up your potato!

Gather toppings

Now you’ll want to gather your toppings. There are so many delicious topping options. I made a nice variety of some of my favorite toppings.

First up are some healthy veggie toppings. I served steamed broccoli, chopped green onion and diced tomatoes. If you love salsa, you could serve that instead of the chopped tomatoes. Chives would also work instead of the green onions. You pick your favorites!

Next, I served some yummy and healthy dairy toppings. I served shredded mozzarella and cheddar cheese and a dish of delicious sour cream.

Finally, some delicious meaty options. I cooked up some bacon and crumbled it in a bowl, then heated up some chili and served it in a second bowl. Yummy!

I placed the potatoes and toppings on my buffet, and my kids just loved helping themselves. They each assembled a potato just how they wanted and were able to pick their favorite toppings, which made them happy. When the kids are happy, I’m happy!
