One batch of these delicious cookies makes about 24 tags, just enough for almost everyone on your list. These cookies are an easy way to give a gift from your heart while still giving your family and friends just what they asked for. Plus, who doesn’t like peanut butter and chocolate cookies?
Edible gift tag cookie recipe
Yields about 24
Recipe slightly adapted from Teaspoon SF
Ingredients:
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1/8 teaspoon baking powder
- Dash of salt
- 1/2 cup butter
- 1/4 cup unsweetened applesauce
- 7 tablespoons smooth peanut butter
- 1/4 cup brown sugar, packed
- 1/3 cup white sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup chocolate chips, melted
- White icing gel
- Toothpick
Directions:
Combine dry ingredients
In a medium bowl, combine the flours, baking powder and salt together with a whisk. Set aside.
Combine wet ingredients
In another large bowl, beat the butter, applesauce, peanut butter, brown sugar, white sugar and vanilla together until smooth.
Add eggs and flour; chill
Add the egg and beat the mixture until smooth. Gradually add the flour and beat until mixture is fully combined.
Wrap the dough with plastic wrap and chill for 1-1/2 to 2 hours.
Roll out dough
Once chilled, knead dough slightly on a lightly floured surface. Liberally flour a rolling pin and then roll dough out to about 1/2-inch thickness.
Using a pizza cutter, cut dough into about 7 columns vertically. Then, cut across to create squares. You may need to reroll out the scrap dough to make extra squares.
Trim squares into gift tags
Using a knife, cut a vertical line on the top right and left hand sides of the cookie to make a slant.
Trim off the sides to make it more symmetrical. Then, using the end of a beater (from an electric mixer), push a hole into the center top of each cookie.
Bake cookies
Bake the cookies for about 8 minutes at 350 degrees F or until golden brown.
Cover with chocolate; chill
Using a frosting knife, carefully frost the bottom half of the cookies with melted chocolate, using the back of the knife to smooth out the clumps.
Once the cookies are frosted, chill in the fridge for at least an hour, or until chocolate has set.
Add finishing touches
Once chocolate is hard, use a toothpick and white icing gel to write messages on the tags. Since they are small, we put a “to” and a heart, but you can put whatever you’d like! Let tags chill again for another 30 minutes, then string ribbon through the top and display!
