Moroccan-style shrimp with pomegranate dipping sauce

Serves 8

Ingredients:

For the shrimp

  • 1 pound frozen shrimp, thawed, tails removed and patted dry
  • 1/4 cup olive oil (plus 1/2 tablespoon, reserved to cook the shrimp)
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon red pepper flakes
  • 1-1/2 teaspoons fresh grated ginger
  • 2 garlic cloves, minced

For the dipping sauce

  • 3 cups pomegranate juice
  • 1/4 cup honey
  • 1/8 cup lemon juice

Directions:

For the dipping sauce

  1. Add the pomegranate juice, honey and lemon juice to a large pan and bring it to a boil. Continue to boil for about 30 minutes, so the sauce thickens slightly and you’re left with about 1 cup of the mixture.
  2. Remove from the heat and set aside until ready to use.

For the shrimp

  1. In a small bowl, mix together the olive oil, lemon juice and zest, garlic, and seasonings. Whisk to mix.
  2. Add the mixture to a large, resealable plastic bag and add in the shrimp. Massage the shrimp so the mixture coats the shrimp. Refrigerate for at least an hour.
  3. Remove the shrimp from the marinade and place in a bowl.
  4. In a large skillet over high heat, add 1/2 tablespoon of olive oil.
  5. Once hot, add the shrimp and cook for about 3 minutes on each side, until cooked through.
  6. Remove, place on a platter and serve with the dipping sauce.
