Moroccan-style shrimp with pomegranate dipping sauce
Recipe adapted from Ladies Home Journal
Serves 8
Ingredients:
For the shrimp
- 1 pound frozen shrimp, thawed, tails removed and patted dry
- 1/4 cup olive oil (plus 1/2 tablespoon, reserved to cook the shrimp)
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon red pepper flakes
- 1-1/2 teaspoons fresh grated ginger
- 2 garlic cloves, minced
For the dipping sauce
- 3 cups pomegranate juice
- 1/4 cup honey
- 1/8 cup lemon juice
Directions:
For the dipping sauce
- Add the pomegranate juice, honey and lemon juice to a large pan and bring it to a boil. Continue to boil for about 30 minutes, so the sauce thickens slightly and you’re left with about 1 cup of the mixture.
- Remove from the heat and set aside until ready to use.
For the shrimp
- In a small bowl, mix together the olive oil, lemon juice and zest, garlic, and seasonings. Whisk to mix.
- Add the mixture to a large, resealable plastic bag and add in the shrimp. Massage the shrimp so the mixture coats the shrimp. Refrigerate for at least an hour.
- Remove the shrimp from the marinade and place in a bowl.
- In a large skillet over high heat, add 1/2 tablespoon of olive oil.
- Once hot, add the shrimp and cook for about 3 minutes on each side, until cooked through.
- Remove, place on a platter and serve with the dipping sauce.
