Cucumber roll-ups with Greek yogurt

For a healthy snack consider cool cucumber roll-ups with Greek yogurt!

For a quick snack or delicious party appetizer look no further than the ever healthy cucumber! It can be used in so many ways, but one of the best is to create rolls! By creatively peeling a cucumber, you can create a bread and tortilla replacement that is both healthy and delicious!

The cool flavor of cucumber blends itself well with a zestier sauce such as the curried Greek yogurt used in this recipe. If you have additional curried yogurt left over, it makes an excellent dipping sauce for other vegetables and even chips.

For best results slicing a cucumber with a mandoline will be the best way to go. Using the 2mm setting will allow you to get a cucumber slice that is even and incredibly thin allowing you to create cucumber slices that will easily roll. Cucumber slices that are too thick can be difficult to roll, and they will come unraveled with little prompting. When cutting a cucumber by hand, this will often be the case. Using a vegetable peeler will often fix this problem, but not always. In the event that you have cucumber slices that prove difficult to keep rolled, simply affix them using toothpicks.

Ingredients:

  • cucumbers
  • 1-1/2  cups low-fat Greek yogurt
  • 1  tablespoon curry powder
  • 1 tablespoon lime juice
  • salt and pepper
  • 1 tablespoons herbs, such as cilantro, if desired
  • ham or turkey if desired

Directions:

Slice the cucumbers using a mandoline at a 2 mm thickness setting or using a vegetable peeler. Lay the cucumbers aside on a paper towel plate to allow excess moisture to drain.

Mix together the yogurt, curry powder and lime juice. Add salt and pepper to taste.

Spread the yogurt mixture across the cucumber slices and sprinkle with fresh herbs if desired.

Spread thinly sliced ham or turkey across the cucumber slices if desired.

Roll up carefully, using a toothpick to close if needed.

Keep refrigerated until serving.
