Using spring produce, like asparagus and strawberries, in these crostini makes them perfect for your garden party, girl’s book club or even fancy brunch. Serve these with a simple salad or bubbly cocktail for the perfect springtime appetizer.
Lemon roasted asparagus with goat cheese & garlic
Serves 6
Ingredients:
- 18 spears asparagus, chopped in thirds
- 6 slices crusty French bread
- About 1/3 cup soft goat cheese
- 3 cloves garlic
- 1 tablespoon olive oil
- Juice from 1/2 lemon
- Salt and pepper
Directions:
- Preheat oven to 400 degrees F. Place the top thirds of the asparagus (with the leafy detail) in a casserole dish (save the remaining asparagus for another recipe). Chop garlic cloves in thirds and add to the casserole dish. Top with olive oil, lemon and salt and pepper. Roast for about 20 minutes or until very fragrant and the vegetables are soft.
- Add bread to the oven and bake for another 5-6 minutes, or until golden brown. Top the bread with one tablespoon of goat cheese. Then layer each slice with three spears of asparagus, chopped garlic and additional salt and pepper.
Strawberry, cream cheese & honey crostini
Serves 8
Ingredients:
- 8 slices crusty French bread
- 4 tablespoons cream cheese
- 1/2 cup frozen strawberries, smashed
- Honey
Directions:
- Preheat oven to 400 degrees F. Place the bread on a baking dish and bake for about 4-5 minutes, or until golden brown.
- Top each slice of bread with about 1-1/2 teaspoons of cream cheese. Top the cream cheese with about 1 tablespoon of smashed strawberries. Drizzle with honey and enjoy!
Dijon chicken salad crostini
Serves 6
Ingredients:
- 6 slices crusty French bread
- 1/4 cup rotisserie chicken slices
- 1/2 stalk celery, chopped
- 2 tablespoons craisins
- 1 tablespoon chopped nuts
- 1-1/2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper
Directions:
- Preheat oven to 375 degrees F. Bake the French bread for about 6 minutes or until crispy.
- Make the chicken salad by combining the chicken, celery, craisins, nuts, mayonnaise, mustard and salt and pepper. Mix.
- Top the bread with about 1 tablespoon of chicken salad and garnish with celery leaves.
