Stuffed French toast recipe

Serves 6
Ingredients:
For compote:
- 1-1/4 cups sliced fresh strawberries
- 1/2 cup sugar
- 1 teaspoon brandy
- 1/4 cup grated orange peel
For French toast:
- 4 eggs
- 2 cups cream
- 1 tablespoon brandy
- 1 tablespoon brown sugar
- 1 teaspoon vanilla
- 12 pieces thickly sliced brioche or egg bread
- 2 tablespoons butter
- 1 teaspoon mascarpone cheese
- Confectioners’ sugar
- Maple syrup
Directions:
- Mix together strawberries, sugar, 1 teaspoon brandy and grated orange peel. Let compote sit for 30 minutes to allow strawberries to soften.
- Lightly beat eggs in a medium bowl. Add cream, 1 tablespoon brandy, brown sugar and vanilla and beat well.
- Soak 12 pieces bread in egg mixture. Melt butter on a griddle over medium heat and cook each piece of bread for 4 minutes per side.
- As toast comes off griddle, immediately spread 1 teaspoon of mascarpone cheese and 2 tablespoons of compote in the middle and fold in half so the cheese melts and strawberries warm up. Sprinkle with confectioners’ sugar and drizzle with maple syrup.

Corned beef hash recipe

Ingredients:
- 1/2 cup chopped red onion
- 1 tablespoon cooking oil
- 1/2 pound red potatoes, boiled (but not mushy) and cubed
- 1 pound cooked corned beef, thickly sliced against the grain and broken into pieces
- Paprika
- 1/4 cup chopped parsley
Directions:
- In a large heavy skillet over medium heat, saute red onion in cooking oil until onion begins to soften. Add red potatoes. Fry until edges begin to crisp. Add corned beef. Toss hash together over medium heat for 2 minutes.
- Remove to a plate, sprinkle with paprika, and garnish with 1/4 cup chopped parsley.

Tex-Mex omelet recipe

Ingredients:
- 1/4 cup chopped onion
- 3 tablespoons butter
- 6 large eggs
- 1/4 cup milk
- 1 cup bite-size pieces of unsalted tortilla chips
- 1/2 cup diced tomatoes
- 2/3 cup grated cheese (preferably Monterey Jack or cheddar)
- 1 to 2 tablespoons finely chopped fresh jalapeño pepper, if desired
- Salt and pepper, to taste
Directions:
- In a heavy skillet, cook onion in butter over moderate heat, stirring, until onion softens.
- Whisk together eggs and milk. Add tortilla chips and pour mixture into skillet with onion. Cook, stirring, until eggs begin to set, about 1 minute.
- Add 1/2 cup diced tomatoes and cook, stirring, until eggs are set. Remove from skillet and immediately top with 2/3 cup grated cheese.
- Garnish with 1 to 2 tablespoons finely chopped fresh jalapeño pepper, if desired. Add salt and pepper to taste.
