Salt and vinegar sweet potato chips recipe

Yields 2 cups

Ingredients:

  • 1 large sweet potato
  • Olive oil spray
  • Malt vinegar
  • Kosher salt

Directions:

  1. Scrub the sweet potato clean and slice as thin as possible. You can use a knife or a mandoline.
  2. Mist the sweet potato slices with olive oil and malt vinegar. If you want a stronger vinegar flavor just mist with a little more vinegar. Sprinkle with kosher salt.
  3. Lay a piece of parchment paper in your microwave oven. Lay out one layer of sweet potato slices and cook for about 3 to 3-1/2 minutes. Be careful to pay attention to your chips or they may burn. The exact timing will depend on the strength of your microwave. Repeat with remaining sweet potato slices until all have been cooked.
  4. Let sit for just a few minutes and then enjoy!
