Makes 8 bars

Be sure to use fresh, soft dates rather than dried ones to get the right consistency. The small pinch of salt really sets off the flavors here, so don’t skip it!

Ingredients:

  • 1 cup pecans
  • 1/3 cup whole flax seeds
  • 1 cup rolled oats
  • 1 cup pitted fresh dates
  • 1 tablespoon ground cinnamon
  • 1 pinch salt

Directions:

  1. Add the pecans to the bowl of a food processor and pulse until the pieces are roughly pea sized.
  2. Add the remaining ingredients and process on high until the dates are pretty evenly distributed.
  3. The mixture does not need to be completely smooth, just incorporated enough to hold together.
  4. Line an 8-inch square baking dish with parchment or aluminum foil. Press the mixture into the pan until evenly distributed, making sure to press it all the way to the edges.
  5. Move the pan to the refrigerator for at least an hour before cutting into 2 × 4-inch bars.
