Maple Plum Upside Down Cake

Ingredients:

  • 1/4 cup vegan margarine
  • t

  • 1/3 cup pure maple syrup
  • t

  • 1/2 cup coarsely chopped walnuts
  • t

  • 8 plums, halved, pitted, sliced
  • t

  • 2 tablespoons ground flax
  • t

  • 6 tablespoons water
  • t

  • 1-1/2 cups white whole wheat flour
  • t

  • 2 teaspoons baking powder
  • t

  • 1 teaspoon ground cinnamon
  • t

  • 1/2 teaspoon salt
  • t

  • 1/3 cup olive oil
  • t

  • 1/2 cup granulated sugar
  • t

  • 1/4 cup firmly packed brown sugar
  • t

  • 1 teaspoon pure vanilla extract
  • t

  • 1/4 vegan buttermilk

Directions:

  1. Preheat oven to 350 degrees F. and generously grease an 8-inch round cake pan.

  3. In a medium saucepan over medium heat, melt margarine.
  4. t

  5. Add syrup and walnuts and cook, stirring occasionally, until thickened.
  6. t

  7. Pour syrup mixture into prepared pan, turning to coat the bottom.
  8. t

  9. Arrange plums on top of syrup mixture in overlapping concentric circles. Set aside.

  11. In a small bowl, combine flax and water and set aside for 5 to 10 minutes.

  13. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.

  15. In a large bowl, whisk together oil, sugars, vanilla, and buttermilk. Whisk in flax mixture.

  17. Add oil mixture to flour mixture and mix until just moistened.
  18. t

  19. Spread batter over plums. Bake for 1 hour or until a knife inserted in the center comes out clean.

  21. Cool on a wire rack for 5 minutes then run a knife around the edges of the cake to loosen it from the pan.

  23. Invert cake pan onto a serving plate, tapping the bottom of the pan to help release the cake. Serve warm.
