Applesauce Pecan Bread
Makes 1 loaf
Ingredients:

- 1-1/4 teaspoons active dry yeast
- 1/2 cup warm water
- Pinch of granulated sugar
- 1/2 cup applesauce
- 1/2 cup vegan buttermilk
- 1/4 cup canola oil
- 2 to 3 cups white whole wheat flour
- 1 teaspoon salt
- 1/2 cup chopped pecans

- In the bowl of a stand up mixer fitted with the paddle attachment, combine yeast, water, and sugar. Set aside for 5 minutes or until mixture becomes frothy.
- In a small saucepan over medium heat, whisk together applesauce, buttermilk, and oil. When mixture is warm, add it to the yeast mixture.
- In a large bowl, whisk together 2 cups of flour and salt. Add 1 cup flour to the applesauce mixture and blend on low to moisten.
- Add an additional 1 cup of flour to the mixture and blend on low until combined. Switch to dough hook.
- Turn mixer on medium speed and knead dough for 2 to 3 minutes. If dough seems wet and sticky, add 1/2 cup flour and continue to knead until dough becomes smooth and elastic, about 8 minutes.
- Dump dough onto a lightly floured surface and knead pecans into dough.
- Form dough into a ball and place in a large greased bowl, turning to coat. Cover bowl with a damp kitchen towel or plastic and set aside in a warm, draft-free place until doubled in size, about 1 hour.
- Punch dough down using your fist and dump dough onto a lightly floured surface. Roll dough into a rectangle the same length as the loaf pan you are going to use.
- Spray loaf pan with cooking spray. Tightly roll dough into a loaf and place in the loaf pan. Cover and allow to rise for 45 minutes.
- Meanwhile, preheat oven to 350 degrees F.
- Bake bread for 40 to 45 minutes or until bread sounds hollow when tapped on the bottom. Let cool on a wire rack for 30 minutes before slicing and serving.
