Vegan Pepper “Steak”

Serves 2

Ingredients:

    t
  • 1 tablespoon coconut oil or grapeseed oil
  • t

  • 1 medium red onion, chopped
  • t

  • 1/2 red bell pepper, cored, seeded, and chopped
  • t

  • 1/2 orange bell pepper, cored, seeded, and chopped
  • t

  • 1/2 cup seitan pieces (try West Soy brand sold at health food stores)
  • t

  • 1/4 teaspoon Spike seasoning
  • t

  • 1/2 tablespoon crushed garlic
  • t

  • 1 tomato, cored and diced
  • t

  • 2 stalks celery, chopped (optional)
  • t

  • 1 tablespoon Bragg Liquid Aminos
  • t

  • 2 tablespoons nutritional yeast

Directions:

    t
  1. Heat coconut or grapeseed oil in a medium saucepan and sauté the onion and peppers until translucent.
  2. t

  3. Add seitan, Spike, garlic, tomato, celery if desired, and liquid aminos and stir-fry for about 10 minutes. Stir in nutritional yeast.
  4. t

  5. Serve over whole grain pasta or brown rice.
