Gluten-Free Banana Bread

Serves 8

Ingredients:

  • 3 tablespoons ground flax
  • t

  • 9 tablespoons water
  • t

  • 1 cup rice flour
  • t

  • 1/2 cup soy flour
  • t

  • 1 cup potato starch
  • t

  • 3 teaspoons baking powder
  • t

  • 1/2 teaspoon salt
  • t

  • 1/4 cup granulated sugar
  • t

  • 1/4 cup firmly packed brown sugar
  • t

  • 1/2 cup vegetable oil
  • t

  • 2 tablespoons water
  • t

  • 3 very ripe bananas, mashed
  • t

  • 1/2 cup shredded toasted coconut

Directions:

  1. Preheat oven to 350 degrees F. and grease an 8.5- X 4-inch loaf pan.

  3. In a large bowl, whisk together flax and water. Set aside for 5 minutes.

  5. In a medium-sized bowl, whisk together rice and soy flours, potato starch, baking powder and salt.

  7. Beat sugars into flax mixture until well-blended. Beat in oil and water. Blend in the mashed bananas.
  8. t

  9. Add flour mixture to sugar mixture and stir until just moist.
  10. t

  11. Pour batter into prepared loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
