Gluten-Free Banana Bread

Ingredients:

- 3 tablespoons ground flax
- 9 tablespoons water
- 1 cup rice flour
- 1/2 cup soy flour
- 1 cup potato starch
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/4 cup firmly packed brown sugar
- 1/2 cup vegetable oil
- 2 tablespoons water
- 3 very ripe bananas, mashed
- 1/2 cup shredded toasted coconut

Directions:

- Preheat oven to 350 degrees F. and grease an 8.5- X 4-inch loaf pan.
- In a large bowl, whisk together flax and water. Set aside for 5 minutes.
- In a medium-sized bowl, whisk together rice and soy flours, potato starch, baking powder and salt.
- Beat sugars into flax mixture until well-blended. Beat in oil and water. Blend in the mashed bananas.
- Add flour mixture to sugar mixture and stir until just moist.
- Pour batter into prepared loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
