Baked Sweet Potato Fries

Ingredients:

  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon dried oregano or other seasoning of your choice

Directions:

  1. Preheat oven to 375 degrees F. and spray a baking sheet with cooking spray.
  2. Slice sweet potatoes into evenly-sized strips or fries and place in a large bowl. Drizzle with oil and season with salt and pepper and oregano. Toss to thoroughly coat.
  3. Place sweet potatoes on the prepared baking sheet, spreading in one layer. Bake for 20 minutes. Turn fries or shake baking sheet to flip fries. Bake for 20 minutes or until fries are lightly browned and tender.
