Chinese Fried Rice

Ingredients:

  • 1 tablespoon canola oil
  • t

  • 1 (8-ounce) package fresh sugar snap peas
  • t

  • 1/2 cup carrots cut into matchsticks
  • t

  • 1/4 cup finely chopped red bell pepper
  • t

  • 4 green onions, sliced (green and white parts)
  • t

  • 2 tablespoons grated fresh ginger
  • t

  • 2 garlic cloves, minced
  • t

  • 2 to 3 cups cooked brown rice
  • t

  • 3 tablespoons soy sauce
  • t

  • 2 teaspoons toasted sesame oil

Directions:

  1. Heat oil in a wok or large skillet over medium-high heat.

  3. Add peas, carrots, and bell pepper and cook, stirring often, for 3 minutes or until carrots are just tender.

  5. Add green onions, ginger, and garlic and cook, stirring often, for 1 to 2 minutes.

  7. Add rice and stir to combine, cooking until rice is heated through.

  9. Stir in soy sauce and sesame oil. Serve hot.
