Serves 8

Ingredients:

  • Pinch of saffron threads
  • t

  • 1/2 cup very warm water
  • t

  • 1 tablespoon olive oil
  • t

  • 1 cup chopped red onion
  • t

  • 1/2 cup chopped carrot
  • t

  • 1/2 cup chopped celery
  • t

  • 1/2 cup chopped red bell pepper
  • t

  • 1 cup orzo
  • t

  • 1 cup vegetable broth
  • t

  • 1/4 cup finely chopped fresh parsley
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. In a small bowl, stir together saffron and water. Set aside.

  3. Heat oil in a large oven-proof skillet over medium heat. Add onion, carrot, celery and bell pepper, stirring to combine.

  5. Cook vegetables, stirring often, until vegetables are tender. Stir in orzo, broth, and saffron water.

  7. Bring to a boil and cover with a lid. Reduce heat to low and cook for 25 to 30 minutes or until liquid is absorbed.

  9. Stir in parsley and season with salt and pepper. Serve hot.
