Italian-Style Farro Salad

Ingredients:

  • 4 cups vegetable broth

  • 1-1/2 cups farro

  • 1 cup sun-dried tomatoes packed in olive oil, drained, chopped

  • 2/3 cup finely chopped red onion
  • t

  • 1/4 cup finely chopped fresh basil leaves
  • t

  • 1 large garlic clove, minced
  • t

  • 1/2 teaspoon dried Italian seasoning or more to taste
  • t

  • 2 tablespoons balsamic vinegar
  • t

  • 1/4 cup extra-virgin olive oil
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. In a medium saucepan over high heat, combine broth and farro and bring to a boil.
