Quinoa Garden Burger

Quinoa Garden Burger

Serves 6

Ingredients:

  • 1/4 cup uncooked quinoa
  • t

  • 1/4 cup dried red lentils
  • t

  • 1-1/2 cups water
  • t

  • 1/2 cup finely chopped walnuts
  • t

  • 1/2 cup fresh whole wheat bread crumbs
  • t

  • 1 (15-ounce) can chickpeas, rinsed, drained, lightly mashed
  • t

  • 3/4 cup finely chopped celery
  • t

  • 3/4 cup finely chopped red onion
  • t

  • 1 cup finely chopped bell pepper
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. In a small saucepan over high heat, combine quinoa, lentils, and water.
  2. t

  3. Bring to a boil, cover pan, reduce heat to low and simmer for 20 minutes or until lentils are tender. Remove from heat and set aside to cool.

  5. Preheat oven to 350 degrees F. Spray a baking sheet with cooking spray.
  6. t

  7. In a large bowl, combine walnuts, bread crumbs, chickpeas, celery, onion, bell pepper, and lentil/quinoa mixture. Season with salt and pepper.

  9. Use your hands to mix ingredients and form 6 patties.
  10. t

  11. Place patties on the prepared baking sheet and bake for 20 minutes. Serve immediately with your choice of bun and toppings.
