Spring Vegetable Salad

Serves 6

Ingredients:

  • 12 spears asparagus, woody ends snapped off, cut into 2-inch pieces
  • t

  • 12 sugar snap peas, strings removed
  • t

  • 2 carrots
  • t

  • 1 small fennel bulb, stalks removed, cored, halved
  • t

  • 1 bunch radishes, trimmed
  • t

  • 6 cups spring mix or baby spinach leaves
  • t

  • 1 tablespoon extra virgin olive oil
  • t

  • 1 tablespoon smooth almond butter
  • t

  • 2 teaspoons white wine vinegar
  • t

  • Juice of 1 lime
  • t

  • 2 teaspoons grated lime zest
  • t

  • 2 tablespoons minced fresh garlic chives or regular chives
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • 1/2 cup pea shoots or other sprouts

Directions:

  1. Steam or blanch asparagus and snap peas until just tender. Transfer to an iced water bath to halt cooking.

  3. Shred carrots in the food processor or with a box grater. Place in a large bowl along with cool asparagus and peas.
  4. t

  5. Use a mandoline to thinly shave fennel and radishes and place in the bowl.
  6. t

  7. Add mixed greens or spinach to the bowl and toss to combine.
  8. t

  9. In a small bowl, whisk together oil, almond butter, vinegar, lime juice, zest, and chives. Season with salt and pepper.

  11. Pour dressing onto vegetables and toss to coat.
  12. t

  13. Divide vegetable salad among 6 plates. Top with pea shoots or sprouts to serve.
