Homemade Fruit Roll-Ups

Homemade Fruit Roll-Ups

Makes 12

Ingredients:

  • 2 cups fresh, ripe berries
  • t

  • 2 teaspoons fresh lemon juice

Directions:

  1. Preheat oven to 140 degrees F. and line a baking sheet with plastic wrap.
  2. t

  3. In a food processor or blender, puree berries. Strain through a fine-mesh sieve, if desired.
  4. t

  5. Stir lemon juice into fruit puree.
  6. t

  7. Spread puree onto baking sheet, forming it into a 12×15-inch rectangle.
  8. t

  9. Dry in the oven for about 18 hours. If you have a food dehydrator, follow manufacturer directions; average drying time in a dehydrator is about 7 hours.

  11. Fruit is ready when you can touch it and your finger doesn’t leave an indentation.

  13. While fruit is still warm, peel from plastic wrap and let cool on a wire rack sprayed with cooking spray.

  15. Once cooled, cut fruit leather in half lengthwise then cut each half crosswise into 6 strips, for a total of 12 fruit roll-ups.

  17. Roll each roll-up in plastic wrap and store in a cool place for up to 1 week, or you can freeze them for up to 3 months.

Note: If your fruit isn’t at its peak sweetness, add a couple tablespoons of agave, maple syrup, or granulated sugar.
