St Patrick’s Day Vegan Colcannon

Ingredients:

- 2 potatoes, peeled, cut into chunks
- 1 tablespoon olive oil
- 2 cups coarsely chopped kale (stems removed)
- 1/2 cup plain soymilk, warm
- 2 tablespoons vegan margarine, melted
- 2 green onions, chopped (green and white parts)
- Salt and freshly ground black pepper to taste

- Place potatoes in a medium pot and cover with water. Bring water to a boil, reduce heat to medium low, and cook until potatoes are tender when pierced with a fork.
