Oven-Dried Tomatoes
Ingredients:

- Roma tomatoes, cored
- Olive oil
- Salt and freshly ground black pepper to taste

Directions:

- Preheat oven to 300 degrees F.
- Cut tomatoes in half and remove seeds. Slice tomatoes lengthwise.
- In a large bowl, combine tomatoes, a drizzle of olive oil, pinch of salt, and a few grinds of pepper. Toss to coat.
- Spread tomatoes in a single layer on a rimmed baking sheet.
- Bake for 45 minutes. Use a spatula to turn tomato pieces.
- Bake for 15 more minutes or until tomatoes have shrunk in size and feel firm but not hard.
- Remove from oven and let cool completely.
- You can store oven-dried tomatoes in the refrigerator for up to 1 week in an airtight container or up to 1 month packed in a mason jar with olive oil.
