Oven-Dried Tomatoes

Dried tomatoes add a dense chewy texture, concentrated sweet flavor, and delicious dose of antioxidants to many veganrecipes. Certainly you can buy them in dry or oil-packed form, or you can just as easily oven-dry them at home. Oven-drying tomatoes also gives you one more tasty reason to plant (or over-plant) tomatoes in your garden.

Oven-Dried Tomatoes

Ingredients:

  • Roma tomatoes, cored
  • t

  • Olive oil
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. Preheat oven to 300 degrees F.

  3. Cut tomatoes in half and remove seeds. Slice tomatoes lengthwise.
  4. t

  5. In a large bowl, combine tomatoes, a drizzle of olive oil, pinch of salt, and a few grinds of pepper. Toss to coat.

  7. Spread tomatoes in a single layer on a rimmed baking sheet.
  8. t

  9. Bake for 45 minutes. Use a spatula to turn tomato pieces.
  10. t

  11. Bake for 15 more minutes or until tomatoes have shrunk in size and feel firm but not hard.

  13. Remove from oven and let cool completely.

  15. You can store oven-dried tomatoes in the refrigerator for up to 1 week in an airtight container or up to 1 month packed in a mason jar with olive oil.
