Roasted Red Peppers
Ingredients:

- 3 red, orange, and/or yellow bell peppers, seeds and membranes removed
- Salt and freshly ground black pepper
- Olive oil

Directions:

- Place upper oven rack 4 inches below broiler. Set oven to broil.
- Place peppers flesh side down in a single layer on a rimmed baking sheet.
- Broil peppers until the skins are blackened. Remove from baking sheet and transfer to a large bowl.
- Cover bowl tightly with plastic wrap and set aside for 15 minutes. This will steam the pepper skins loose.
- Remove from the bowl and peel the skins off. You can also leave a little blackened skin on the peppers to add a smokier flavor. Season with salt and pepper.
- Let peppers cool completely. Pack in a mason jar with olive oil and store in the refrigerator for up to 10 days. Make sure peppers stay covered with olive oil.
