Barbecued Tofu Nuggets
Makes 12 nuggets
Ingredients:

- 6 ounces smoked barbecued tofu, cut into 12 cubes
- 1/3 cup vegan barbecue sauce
- 1-1/2 cups finely crushed potato chips

Directions:

- Preheat oven to 375 degrees F. and grease a baking sheet.
- Pat tofu dry with paper towels and brush with barbecue sauce.
- Place potato chips in a bowl. Drop tofu into bowl and lightly toss to coat with chips.
- Place nuggets on prepared baking sheet and bake for 12 minutes or until hot and crispy.
- Let cool on baking sheet for 1 minute then transfer to a serving platter.
