Grilled Radicchio with Walnuts
Serves 4
Ingredients:

- 1 large head radicchio
- 1 orange, halved
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- 1/2 cup coarsely chopped walnuts

Directions:

- Heat grill to medium heat.
- Peel the very outer leaves from radicchio. Quarter the radicchio lengthwise through the core so quarters hold together.
- Squeeze juice from half of the orange into a small bowl. Whisk in balsamic and olive oil. Season with salt and pepper.
- Brush radicchio with orange juice mixture. Place on the grill and grill for 1 to 2 minutes.
- Flip and brush with orange juice mixture. Grill for 1 to 2 minutes.
- Continue to grill until radicchio is wilted and lightly browned.
- Transfer to a plate. Add walnuts to remaining orange juice mixture and toss to coat.
- Scatter walnuts over radicchio. Cut remaining half of orange into slices and serve with radicchio.
