Spicy Almond Noodles
Serves 4
Ingredients:

- 8 ounces fettuccini
- 1/2 cup matchstick carrots
- 1/2 cup matchstick red bell pepper
- 1 cup snow peas
- 1/3 cup dark sesame oil
- 1/2 cup almond butter
- 3 tablespoons rice wine vinegar
- Juice and grated zest of 1 lime
- 2 tablespoons tamari
- Pinch or more crushed red pepper flakes
- 1/4 cup chopped fresh cilantro
- 3 green onions, chopped (green and white parts)
- 1/4 cup coarsely chopped raw almonds

Directions:

- Cook fettuccine according to package directions, adding carrots, pepper, and snow peas during the last minute of cooking.
- Drain in a colander and rinse with cold water. Transfer to a large bowl.
- Meanwhile, in a small food processor, combine sesame oil, almond butter, vinegar, lime juice and zest, tamari and red pepper. Blend until smooth.
- Pour almond butter sauce over noodle mixture, tossing to coat.
- Stir in cilantro and green onions. Garnish with almonds at serving time.
