Ingredients:

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 1 red bell pepper, seeded, chopped
  • t

  • 2 cloves garlic, minced
  • t

  • 3 cups diced sweet potato
  • t

  • 3 cups vegetable broth, divided
  • t

  • 2 cups whole wheat couscous
  • t

  • 6 large apricots, pitted, diced
  • t

  • 2 teaspoons curry powder
  • t

  • 1/2 teaspoon ground coriander
  • t

  • 2 tablespoons finely grated lemon zest
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • 1/2 cup finely chopped fresh parsley
  • t

  • 2 tablespoons finely chopped fresh mint

Directions:

  1. Heat oil in a deep, wide skillet over medium heat. Add onion and pepper and cook, stirring often, for 3 minutes.

  5. Stir in sweet potato and 1 cup broth. Cook, stirring, until broth comes to a boil.
