Raw Zucchini Wraps

Makes 12

Ingredients:

    t
  • 2 zucchini, ends trimmed
  • t

  • 1 large carrot, cut into matchsticks
  • t

  • 1/2 bell pepper, cut into matchsticks
  • t

  • 1/2 cup fresh flat leaf parsley leaves
  • t

  • 1/2 cup smooth almond butter
  • t

  • 1 tablespoon finely chopped fresh ginger
  • t

  • 1 clove garlic, chopped
  • t

  • 1 tablespoon lemon zest
  • t

  • Juice of 1/2 lemon
  • t

  • 3/4 cup water

Directions:

  1. Use a vegetable peeler to cut zucchini into long thin strips.
  2. t

  3. Lay strips out flat and fill each with carrot, bell pepper, and parsley. Roll zucchini strips around vegetables and set on a serving platter seam side down.
  4. t

  5. Place remaining ingredients in a food processor and blend until smooth. Serve sauce with zucchini wraps.
