Quick Eggplant Burgers

Serves 4

Ingredients:

    t
  • 1 (11-ounce) package Dominex Eggplant Burgers (4 patties per package)
  • t

  • 1 red onion
  • t

  • 1 tablespoon sugar
  • t

  • 2 teaspoons olive oil
  • t

  • 2 tablespoons balsamic vinegar
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • Vegan mayonnaise
  • t

  • 4 whole grain buns, toasted on the grill
  • t

  • 4 red leaf lettuce leaves

Directions:

  1. Let eggplant burgers thaw at room temperature for 20 minutes before grilling.
  2. t

  3. Meanwhile, half the onion and cut into thin slices, separating the slices.
  4. t

  5. Heat oil in a large skillet over medium heat. Add onions and cook, stirring ocassionally, until onions are very soft.
  6. t

  7. Add sugar and balsamic vinegar. Cook, stirring often, until onions turn golden and are caramelized.
  8. t

  9. Season onions with salt and pepper. Remove from heat.
  10. t

  11. Preheat grill to medium-high heat and oil the grill grate. Place eggplant burgers in a grill basket and place on the grill.

  13. Grill burgers for 3 minutes per side or until heated through.
  14. t

  15. Spread vegan mayo on buns. Set a burger on each of the bottom halves of the buns. Top with caramelized onions, lettuce leaf, and the remaining bun.
  16. t

  17. Serve immediately with Baked Sweet Potato Fries or Grilled Sweet Potato Salad.

Cook’s note: Make 3 or 4 batches of caramelized onions and keep them in your freezer. Partially thaw them in a large pot of warm water and simply reheat in a skillet.
