Fancy Purple Potato and Yellow Bean Plate
Serves 4
Ingredients:

- 4 medium purple potatoes
- Sea salt to taste
- 2/3 pound yellow wax beans
- 4 long chives
- 4 sprigs fresh rosemary
- 4 sprigs fresh lavender

Directions:

- Cook potatoes in a medium pot of salted boiling water until just tender. Use a slotted spoon to transfer potatoes to a cutting board.
- Place beans in the boiling water and blanch for just a couple of minutes. Transfer to an iced water bath to halt cooking. Place on paper towels to drain.
- Slice potatoes and fan the slices of each potato onto a serving plate. Sprinkle with sea salt.
- Bundle wax beans into 4 portions, carefully tying a chive around each to hold together. Set on the plate with the potatoes.
- Set a rosemary sprig alongside the potatoes and a lavendar sprig on the beans. Serve.

Cook’s note: You can serve vegetables with a generous drizzle of really good extra virgin olive oil or your favorite dressing, if desired.
