Banana Split Waffles
Makes 6 Belgian waffles or 10 to 12 standard waffles
Ingredients:
- 1/2 cup Sucanat
- 2 ripe bananas
- 2 cups nondairy milk
- 1/4 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1-1/2 cups old fashioned oats
- 1-1/2 cups all purpose flour, divided
- 1 tablespoon baking powder
- 1/4 teaspoon fine sea salt
- 2 tablespoons cornstarch
- 1/2 cup dried cherries
- Vegan ice cream, optional
Directions:
1. Combine sucanat, bananas, milk, oil, vanila, cinnamon, oats, 1/2 cup flour, baking powder, and salt in a large bowl.
2.Use an immersion blender and blend until smooth. Stir in cornstarch and cherries along with remaining 1 cup flour. Let stand for 15 minutes.
3. Coat the waffle iron with cooking spray in between each waffle, when the machine has sufficiently preheated.
4. Following the manufacturer’s instructions for your waffle maker, pour about 3/4 cup batter for Belgian waffles or about 1/2 cup for standard, adjusting to fit your waffle iron, and cook until golden.
5. For ultimate crispiness, toast waffles before serving. Top with a scoop of vegan ice cream, if desired.
