2. Parmesan cauliflower bites
Total time: 20 minutes
Ingredients:
- 1/2 cup vegetable oil
- 1 cup panko
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Emeril’s Essence Creole Seasoning
- 4 cups cauliflower florets
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
Directions:
- In a large skillet over medium-high heat, heat the vegetable oil.
- In a large bowl, combine the panko, Parmesan and Emeril’s Essence, then set it aside.
- Working in batches, dredge the cauliflower through the flour.
- Dip the cauliflower into the eggs.
- Dredge the cauliflower through the panko mixture, pressing to coat.
- Add the cauliflower to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 2 to 3 minutes.
- Transfer to a paper towel-lined plate.
