2. Parmesan cauliflower bites

Total time: 20 minutes

Ingredients:

  • 1/2 cup vegetable oil
  • 1 cup panko
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Emeril’s Essence Creole Seasoning
  • 4 cups cauliflower florets
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten

Directions:

  1. In a large skillet over medium-high heat, heat the vegetable oil.
  2. In a large bowl, combine the panko, Parmesan and Emeril’s Essence, then set it aside.
  3. Working in batches, dredge the cauliflower through the flour.
  4. Dip the cauliflower into the eggs.
  5. Dredge the cauliflower through the panko mixture, pressing to coat.
  6. Add the cauliflower to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 2 to 3 minutes.
  7. Transfer to a paper towel-lined plate.
