4. Cauliflower-Brie gratin

Total time: 1 hour 20 minutes

Ingredients:

  • 2 cups whole milk
  • 3 bay leaves
  • 2 sprigs fresh thyme, plus more for garnish
  • 2 garlic cloves, chopped
  • 2 ounces unsalted butter
  • 1/4 cup all-purpose flour
  • 4 ounces Brie, rind removed
  • 1/2 teaspoon fresh grated nutmeg
  • 2 pounds cauliflower, cut into small florets
  • Salt and freshly ground black pepper

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Simmer the milk, bay leaves, thyme and garlic for about 15 minutes, then remove from heat, strain, and set aside.
  3. In a medium pot, melt the butter and flour together, stirring to form a paste.
  4. Very slowly add the milk, whisking as you go.
  5. Add the Brie and nutmeg, and continue stirring.
  6. Pour in the cauliflower, and stir to coat.
  7. Season with salt and pepper.
  8. Spoon into a dish.
  9. Bake for 40 minutes or until bubbly and the cauliflower is tender.
