4. Cauliflower-Brie gratin
Total time: 1 hour 20 minutes
Ingredients:
- 2 cups whole milk
- 3 bay leaves
- 2 sprigs fresh thyme, plus more for garnish
- 2 garlic cloves, chopped
- 2 ounces unsalted butter
- 1/4 cup all-purpose flour
- 4 ounces Brie, rind removed
- 1/2 teaspoon fresh grated nutmeg
- 2 pounds cauliflower, cut into small florets
- Salt and freshly ground black pepper
Directions:
- Preheat the oven to 375 degrees F.
- Simmer the milk, bay leaves, thyme and garlic for about 15 minutes, then remove from heat, strain, and set aside.
- In a medium pot, melt the butter and flour together, stirring to form a paste.
- Very slowly add the milk, whisking as you go.
- Add the Brie and nutmeg, and continue stirring.
- Pour in the cauliflower, and stir to coat.
- Season with salt and pepper.
- Spoon into a dish.
- Bake for 40 minutes or until bubbly and the cauliflower is tender.
