5. Garlic herb-roasted cauliflower

Total time: 20 minutes

Ingredients:

  • 1 head cauliflower
  • 1 medium onion
  • 4 sprigs thyme
  • 4 garlic cloves, unpeeled
  • 3 tablespoons olive oil
  • Salt and pepper
  • 1/2 cup Parmesan

Directions:

  1. Preheat the oven to 425 degrees F.
  2. Cut the head of cauliflower into florets.
  3. Toss the florets onto a large, rimmed baking sheet.
  4. Top with the onion, thyme sprigs, garlic cloves and olive oil.
  5. Season with salt and freshly ground black pepper.
  6. Roast, tossing occasionally, until almost tender, 35 to 40 minutes.
  7. Sprinkle with the Parmesan, toss to combine, and roast until the cauliflower is tender, about 10 to 12 minutes.
