5. Garlic herb-roasted cauliflower
Total time: 20 minutes
Ingredients:
- 1 head cauliflower
- 1 medium onion
- 4 sprigs thyme
- 4 garlic cloves, unpeeled
- 3 tablespoons olive oil
- Salt and pepper
- 1/2 cup Parmesan
Directions:
- Preheat the oven to 425 degrees F.
- Cut the head of cauliflower into florets.
- Toss the florets onto a large, rimmed baking sheet.
- Top with the onion, thyme sprigs, garlic cloves and olive oil.
- Season with salt and freshly ground black pepper.
- Roast, tossing occasionally, until almost tender, 35 to 40 minutes.
- Sprinkle with the Parmesan, toss to combine, and roast until the cauliflower is tender, about 10 to 12 minutes.
