2. Chewy ginger molasses cookies recipe

Total time: 35 minutes

Ingredients:

  • 1-1/2 cups butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 2 eggs
  • 4 cups all-purpose flour
  • 4 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon salt

Directions:

  1. Preheat the oven to 375 degrees F.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger and salt. Set aside.
  3. In the bowl of an electric mixer, cream the butter and sugar.
  4. Add in the eggs and molasses, and beat on medium-low speed until combined. Gradually add in the dry ingredient mixture, and beat until combined.
  5. Roll the dough into small balls about 1 inch in diameter.
  6. Fill a small bowl with cinnamon and sugar, and roll each ball until completely coated.
  7. Place the cookie dough balls on a cookie sheet at least 1 inch apart.
  8. Bake for about 8 to 10 minutes, until the cookies begin to crack slightly on top.
