4. Honey garlic and ginger ribs recipe

Prep time: 45 minutes | Cook time: 8-9 hours | Total time: 16 hours

Ingredients:

  • 3-4 pounds pork ribs (back or side ribs)

For the dry rub

  • 2 tablespoons powdered ginger
  • 1 tablespoon onion salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground thyme
  • 1 teaspoon dried orange peel

For the glaze

  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 teaspoon ground black pepper
  • 1/4 cup of sweet chili sauce
  • 1/4 cup molasses

Directions:

  • Prepare the dry rub.
  • To prepare the glaze, in a medium saucepan, add the olive oil and minced garlic. Cook over medium heat to soften the garlic, but do not let it brown.
  • Add the honey, soy sauce and black pepper.
  • Simmer very slowly together for about 20 minutes, until the sauce reduces and thickens slightly. Remove from the heat, and allow to cool for a few minutes.
  • To prepare the ribs, liberally rub the spice mix all over the surface of the pork ribs on both sides.
  • Cover with plastic wrap, and place in the fridge overnight.
  • Place the ribs, uncovered, on a wire rack over a baking sheet, and place in a 225 degree F oven for 8 to 9 hours, depending on the thickness of the ribs.
  • During the last couple of hours or so of cooking time, brush on the glaze, and turn the ribs every 30 minutes or so.
  • When a bone from the ribs can easily and cleanly be pulled away from the meat, they are done.
