5. Honey cake

Ingredients:

  • 1 stick butter, room temperature
  • 3/4 cup brown sugar
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup honey
  • 1 teaspoon vanilla

Honey glaze:

  • 2/3 cup honey
  • 1/4 cup light brown sugar
  • 1/3 cup (2-2/3 ounces) unsalted butter
  • 1 teaspoon pure vanilla extract

Directions:

  1. Preheat oven to 350 degrees F.
  2. In bowl of stand mixer, cream butter and sugar on medium speed until combined.
  3. In small bowl mix together wet ingredients: buttermilk, honey and vanilla; set aside.
  4. Add buttermilk mixture to butter mixture.
  5. Add eggs one at a time, beating well after each addition and scraping down sides of bowl as needed.
  6. In medium bowl mix together dry ingredients: flour, baking powder and salt; set aside.
  7. Gradually add the dry to the wet ingredients.
  8. Fill the mini Bundt forms 2/3 full.
  9. Bake for 25 minutes.
  10. Brush on honey glaze while cakes are still warm.
