5. Sriracha street corn recipe
Total time: 25 minutes
Ingredients:
- 4 ears corn, shucked and split in half to form 8 pieces
- Extra-virgin olive oil
- Garlic salt
- 1/3 cup mayonnaise
- 1 tablespoon Sriracha sauce
- A bunch cilantro, roughly chopped
- 3 limes, each cut into 6 slices
- Coarse flake salt
- Cotija cheese, for topping
Directions:
- Slather the corn with olive oil, and sprinkle with garlic salt.
- Heat a grill pan to high heat, and grill the corn until black marks start to appear.
- Mix together the mayonnaise, Sriracha sauce and a squeeze of lime juice.
- Brush the mayonnaise mixture onto the cooked corn, then sprinkle with the cilantro and coarse salt.
- Squeeze the lime over the corn, and sprinkle with Cotija cheese.
