5. Sriracha street corn recipe

Total time: 25 minutes

Ingredients:

  • 4 ears corn, shucked and split in half to form 8 pieces
  • Extra-virgin olive oil
  • Garlic salt
  • 1/3 cup mayonnaise
  • 1 tablespoon Sriracha sauce
  • A bunch cilantro, roughly chopped
  • 3 limes, each cut into 6 slices
  • Coarse flake salt
  • Cotija cheese, for topping

Directions:

  1. Slather the corn with olive oil, and sprinkle with garlic salt.
  2. Heat a grill pan to high heat, and grill the corn until black marks start to appear.
  3. Mix together the mayonnaise, Sriracha sauce and a squeeze of lime juice.
  4. Brush the mayonnaise mixture onto the cooked corn, then sprinkle with the cilantro and coarse salt.
  5. Squeeze the lime over the corn, and sprinkle with Cotija cheese.
