2. Banana cream waffle cake recipe
Yields 4
Ingredients:
- 2 cups flour
- 4 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1-1/2 cups milk
- 1/4 cup melted butter
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs
- 3 ripe mashed bananas
- 4 cups whipped cream topping
- 3-4 large bananas, sliced
Directions:
- Heat a thin waffle maker.
- In a bowl, whisk together the flour, sugar, baking powder and salt.
- In another bowl, whisk together the milk, melted butter, vegetable oil, vanilla, eggs and mashed bananas.
- Add the milk mixture to the dry mixture, and combine thoroughly. (Small lumps are OK.)
- Lightly spray the top and bottom of the waffle iron with nonstick cooking spray.
- Fill the waffle iron partway with batter.
- Close the lid gently, and cook until the waffles are brown, 5 to 6 minutes.
- Continue with the remaining batter.
- To assemble the cake, spread 1/2 cup of whipped cream onto a waffle, top with bananas, and continue with the remaining waffles, whipped cream and bananas, creating a stack.
- Decorate the top layer with the remaining banana slices.
