4. Sweet potato-zucchini hash waffle recipe

Yields 2

Ingredients:

  • 1 large, peeled sweet potato, shredded
  • 2 large zucchini, shredded (strained of extra moisture)
  • 1/2 cup shredded carrot
  • 1/4 cup Parmesan cheese
  • 1/2 tablespoon garlic powder
  • 2 tablespoons fresh chopped rosemary
  • 1 egg
  • 1/4 cup flour
  • Salt and pepper, to taste

Directions:

  1. Heat the waffle iron on high heat.
  2. In a bowl, combine the shredded sweet potato, zucchini, carrot, cheese, garlic powder and rosemary.
  3. Lightly beat the egg, mix it well into the vegetables, and then mix in the flour, salt and pepper until well combined.
  4. Spray the waffle iron with nonstick cooking spray.
  5. Place a small amount of the mixture onto each quarter of the waffle iron, and close the lid. Let cook for 5 to 7 minutes or until brown, crispy and cooked through.
