5. Beef tamale waffle recipe

Yields 2

Ingredients:

  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 cups buttermilk
  • 3 tablespoons melted butter
  • 1 egg
  • 2 cups shredded beef
  • 1 cup red chili sauce
  • 1 cup shredded cheddar cheese

Directions:

  1. Heat the waffle iron.
  2. In a bowl, combine the cornmeal, flour, baking powder, baking soda and salt.
  3. In another bowl, mix together the buttermilk, melted butter and egg.
  4. Combine the wet mixture with the dry ingredients. (The batter will have small lumps.)
  5. Combine the shredded beef and red chili sauce.
  6. Spoon a portion of the cornmeal mixture into the bottom of the waffle iron, top with a layer of the beef, and sprinkle some cheese over the top of the beef and then a little more cornmeal mixture to cover.
  7. Close the iron, and cook for 5 to 7 minutes, until the batter is cooked through and the edges are crispy.
  8. Serve with sour cream and more red chili sauce.
