5. Beef tamale waffle recipe
Yields 2
Ingredients:
- 1 cup cornmeal
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1-1/2 cups buttermilk
- 3 tablespoons melted butter
- 1 egg
- 2 cups shredded beef
- 1 cup red chili sauce
- 1 cup shredded cheddar cheese
Directions:
- Heat the waffle iron.
- In a bowl, combine the cornmeal, flour, baking powder, baking soda and salt.
- In another bowl, mix together the buttermilk, melted butter and egg.
- Combine the wet mixture with the dry ingredients. (The batter will have small lumps.)
- Combine the shredded beef and red chili sauce.
- Spoon a portion of the cornmeal mixture into the bottom of the waffle iron, top with a layer of the beef, and sprinkle some cheese over the top of the beef and then a little more cornmeal mixture to cover.
- Close the iron, and cook for 5 to 7 minutes, until the batter is cooked through and the edges are crispy.
- Serve with sour cream and more red chili sauce.
