2. Watermelon fruit leather recipe

Yields 1 (12 x 18-inch) sheet pan

Ingredients:

  • 8 cups seedless watermelon
  • 2 cups fresh kiwi
  • 3/4 cup sugar

Directions:

  1. Heat the oven to 175 degrees F.
  2. In a food processor, blend together the fruit.
  3. Strain the fruit mixture through a fine mesh strainer lined with cheese cloth.
  4. Place the strained fruit mixture back into the food processor, and blend thoroughly with the sugar.
  5. Line 1 baking sheet with a silicone mat or parchment paper.
  6. Spread the mixture over the pan about 1/4 inch think, leaving space between the fruit mixture and the edges of the pan.
  7. Bake for 6 to 8 hours, rotating the pan every hour.
  8. The fruit leather is done when the moisture is gone and the fruit mix is slightly sticky.
  9. Let cool, then cut the leather into desired pieces. Store in an airtight container.
