2. Watermelon fruit leather recipe
Yields 1 (12 x 18-inch) sheet pan
Ingredients:
- 8 cups seedless watermelon
- 2 cups fresh kiwi
- 3/4 cup sugar
Directions:
- Heat the oven to 175 degrees F.
- In a food processor, blend together the fruit.
- Strain the fruit mixture through a fine mesh strainer lined with cheese cloth.
- Place the strained fruit mixture back into the food processor, and blend thoroughly with the sugar.
- Line 1 baking sheet with a silicone mat or parchment paper.
- Spread the mixture over the pan about 1/4 inch think, leaving space between the fruit mixture and the edges of the pan.
- Bake for 6 to 8 hours, rotating the pan every hour.
- The fruit leather is done when the moisture is gone and the fruit mix is slightly sticky.
- Let cool, then cut the leather into desired pieces. Store in an airtight container.
