3. Summer grilled watermelon salad recipe
Serves 4-6
Ingredients:
- 1/2 large watermelon
- 2 whole fresh ears corn
- 1/4 cup olive oil
- 1/2 cup fresh chopped basil
- 1/2 cup chopped almonds
- 1/2 cup feta cheese
- 1 tablespoon balsamic vinegar
- 1 handful arugula
- Salt and pepper, to taste
Directions:
- Heat the grill or grill pan.
- Cut the watermelon into 1/2-inch-thick pieces, removing the rind.
- Shuck and clean the corn.
- Brush the watermelon and corn with olive oil, and grill each piece of watermelon and corn for 3 minuets per side to get grill marks.
- Let the watermelon cool, then dice it into bite-size cubes.
- Remove the corn from the cob.
- In a bowl, mix together the watermelon, corn, basil, almonds, feta, arugula and vinegar, and season with salt and pepper.
