3. Summer grilled watermelon salad recipe

Serves 4-6

Ingredients:

  • 1/2 large watermelon
  • 2 whole fresh ears corn
  • 1/4 cup olive oil
  • 1/2 cup fresh chopped basil
  • 1/2 cup chopped almonds
  • 1/2 cup feta cheese
  • 1 tablespoon balsamic vinegar
  • 1 handful arugula
  • Salt and pepper, to taste

Directions:

  1. Heat the grill or grill pan.
  2. Cut the watermelon into 1/2-inch-thick pieces, removing the rind.
  3. Shuck and clean the corn.
  4. Brush the watermelon and corn with olive oil, and grill each piece of watermelon and corn for 3 minuets per side to get grill marks.
  5. Let the watermelon cool, then dice it into bite-size cubes.
  6. Remove the corn from the cob.
  7. In a bowl, mix together the watermelon, corn, basil, almonds, feta, arugula and vinegar, and season with salt and pepper.
