5. Watermelon rind pickles recipe
Yields 4 (12 ounce) jars
Ingredients:
- Rind from 1 watermelon
- 3/4 cup water
- 1/2 cup sugar
- 4 tablespoons kosher salt
- 1 cup red wine vinegar
- 2 tablespoons pickling spice
Directions:
- Remove the watermelon flesh from the rind, leaving a little bit of the red flesh on the rind.
- Cut the rind into 1-inch strips.
- In a large saucepan or pot, combine the water, sugar and salt, letting the sugar and salt dissolve.
- Once the sugar and salt are dissolved, add the vinegar and pickling spice.
- Bring to a boil, stirring to combine ingredients.
- Add in the watermelon rind, return to a boil, then let simmer for a few minutes.
- Once the rind has softened and released some of its liquid, remove from the heat, and let cool.
- Fill canning jars or a container with the rind, and then ladle in the vinegar mixture until almost full.
- Seal the jars or container, and refrigerate.
- Best chilled overnight.
