5. Watermelon rind pickles recipe

Yields 4 (12 ounce) jars

Ingredients:

  • Rind from 1 watermelon
  • 3/4 cup water
  • 1/2 cup sugar
  • 4 tablespoons kosher salt
  • 1 cup red wine vinegar
  • 2 tablespoons pickling spice

Directions:

  1. Remove the watermelon flesh from the rind, leaving a little bit of the red flesh on the rind.
  2. Cut the rind into 1-inch strips.
  3. In a large saucepan or pot, combine the water, sugar and salt, letting the sugar and salt dissolve.
  4. Once the sugar and salt are dissolved, add the vinegar and pickling spice.
  5. Bring to a boil, stirring to combine ingredients.
  6. Add in the watermelon rind, return to a boil, then let simmer for a few minutes.
  7. Once the rind has softened and released some of its liquid, remove from the heat, and let cool.
  8. Fill canning jars or a container with the rind, and then ladle in the vinegar mixture until almost full.
  9. Seal the jars or container, and refrigerate.
  10. Best chilled overnight.
