4. Cookie butter chicken lettuce wraps recipe

Yields 8

Ingredients:

  • 1 boneless, skinless chicken breast (cut into 1/2-inch slices)
  • 1 teaspoon ground coriander
  • 2 cloves minced garlic
  • 1 teaspoon minced ginger
  • 2 teaspoons vegetable oil
  • 1 sliced bell pepper (green, red or orange)
  • 1/4 cup Sriracha sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons cookie butter
  • 8 large Boston or bibb lettuce leaves
  • Cilantro, basil and mint, for garnish

Directions:

  1. In a small bowl, toss the chicken with the coriander, garlic and ginger. Set aside.
  2. In a large, nonstick skillet, heat the oil over medium-high heat.
  3. Add the chicken, and cook for 4 to 5 minutes.
  4. Add the sliced bell peppers to the skillet, and cook for an additional 2 minutes.
  5. Add the Sriracha and soy sauces.
  6. Reduce the heat, and stir in the cookie butter until well combined.
  7. Spoon the chicken evenly into the lettuce leaves.
  8. Garnish with fresh herbs, as desired.
