4. Cookie butter chicken lettuce wraps recipe
Yields 8
Ingredients:
- 1 boneless, skinless chicken breast (cut into 1/2-inch slices)
- 1 teaspoon ground coriander
- 2 cloves minced garlic
- 1 teaspoon minced ginger
- 2 teaspoons vegetable oil
- 1 sliced bell pepper (green, red or orange)
- 1/4 cup Sriracha sauce
- 2 tablespoons soy sauce
- 2 tablespoons cookie butter
- 8 large Boston or bibb lettuce leaves
- Cilantro, basil and mint, for garnish
Directions:
- In a small bowl, toss the chicken with the coriander, garlic and ginger. Set aside.
- In a large, nonstick skillet, heat the oil over medium-high heat.
- Add the chicken, and cook for 4 to 5 minutes.
- Add the sliced bell peppers to the skillet, and cook for an additional 2 minutes.
- Add the Sriracha and soy sauces.
- Reduce the heat, and stir in the cookie butter until well combined.
- Spoon the chicken evenly into the lettuce leaves.
- Garnish with fresh herbs, as desired.
